Hi everyone! It has been awhile since I have posted. My time has been occupied with many other family events and activities and and those come first. You could see updates on our family if you follow us on Facebook and Instagram. Now on to a recipe you will want to Pin and make, especially if you like Mexican food. We have several favorite meals that we make a couple times a month. Mexican Taco Casserole is one of these family favorites and it is really easy to make. This is a recipe that I have made changes to through the years. I am going to post the original recipe, and then tell you the changes I make. I usually never follow recipes 100%. I use what I have on hand or make changes to taste.
We make two large trays for our family, but there is always leftovers! Great for another meal, usually lunch! (The third smaller tray is for my 18 year old son who is now gluten and lactose free. We added goat cheese instead of the cheddar cheese.) We never make just one recipe of anything in our house. The question is always how many recipes to make?
We top this awesome meal with several fresh vegetables and a little sour cream and/or taco sauce.
Mexican Taco Casserole
12 corn tortillas (Or flour)
Meat sauce:
1 1/2 pounds ground beef (Brown in a pan)
1 onion, chopped: add to the meat while browning
3 cloves of garlic, crushed: add to meat while browning
1 package of taco mix (I add 1 tablespoon Chili powder, 1/2 teaspoon cumin, 1 1/2 teaspoon Celtic sea salt, and pepper instead of the taco mix. I use to use a prepackage mix, I just prefer to add seasonings to our liking and not have to worry about MSG or other unknown additives.)
1 8 ounce tomato sauce
1 16 ounce diced or crushed tomatoes
1 can green chilies (I use a fresh JalapeƱo sometimes.)
1/2 pound cheddar cheese (shredded)
Layer in a 9x13 pan:
6 tortillas
1/2 of the meat sauce
1/2 of the shredded cheese
Repeat
Then bake in the oven at 350 degrees for around 30 min. or until the cheese is melted and it is heated through.
Add Toppings to your liking:
Sour cream
Taco Sauce
Lettuce
Green onions
Tomatoes
Olives
Jalapeno Peppers
Guacamole
This time I actually made some guacamole to go with the Mexican Taco Casserole. That in it self is never the same. I add several Avocado, lots of Celtic Sea Salt, pepper, lots of fresh garlic, chopped onion, chopped tomatoes, fresh lemon juice, and cilantro if I have it.
